orange-cranberry biscotti

Orange Cranberry Pistachio Biscotti

Ingredients:

1 ¾ c. all-purpose flour

¼ t. salt

1 t. baking powder

¼ c. OLIVE TREE Butter olive oil

¾ c. white sugar

1 ½ t. vanilla extract

½ t. almond extract

2 T. fresh grated orange peel OR 1 T. dried orange peel

2 eggs (room temp)

½ c. dried cranberries

1 ½ c. pistachio nuts

For dipping:

4 oz. bittersweet chocolate; chopped

½ T. OLIVE TREE Butter olive oil

Directions:

Preheat oven to 300 F. Line a cookie sheet with parchment paper. Sift together flour, baking powder and salt. Set aside. In a separate bowl, whisk together oil & sugar until well blended. Add vanilla & almond extracts along with orange peel, mixing well. Beat in eggs, one at a time, mixing well after each addition. Gradually add flour mixture & mix until evenly incorporated. Stir in pistachios & cranberries by hand.

Divide dough in half. (Dough will be very sticky!) Form two logs side by side (12” x 2”) on the parchment lined cookie sheet; several inches apart. (logs will spread during baking!)  Bake for about 35 minutes, until logs are light brown and firm to the touch. Remove from oven and immediately reduce oven temperature to 275 F. Set biscotti aside to cool for about 10 minutes.

Carefully transfer the logs to a cutting surface. Using a serrated knife, cut logs on the diagonal into ¾” slices. Arrange slices, cut side down, back on parchment lined cookie sheet. Bake approximately 8-10 minutes, or just until dry and golden. Cool completely on a wire rack.

Once the biscotti have completely cooled, place chopped chocolate and ½ T. OLIVE TREE Butter olive oil in a (DRY) microwave safe bowl. Heat for 30 seconds; stir; heat another 30 seconds; stir… until melted and combined. Dip the bottoms of the biscotti in the melted chocolate, and allow them to set, lying on their sides.

So why this recipe?  Well… there’s a story. There’s ALWAYS a story. So my daughter and I don’t do dairy. It doesn’t like us. So when making my biscotti for Thanksgiving this year, I decided to try the butter olive oil from my dear friend, Mindy, at Olive Tree. (My very, very FAV place to buy olive oil and vinegars, BTW!) Loved the (buttery) flavor, so I took one in for her to taste. (Yes. One. Sorry Mindy. There were actually two left at the time. I ate the other one…) As it ends up, the very day that I popped into the store to drop it off is the same day that she had decided to team up with Jasper Mirabile (renowned chef, cookbook author, radio host and owner of Jasper’s Ristorante and Marco Polo Italian Market. Whew!!) for their first annual cookie contest together. So I decided to enter my Orange Cranberry Pistachio Biscotti (with my BUTTER olive oil from Olive Tree)… and I won 2nd place!!  WooHoo!!! So exciting! So why not give the recipe a go, and let me know how they turn out!  Better yet, bring some by and I would be happy to let you know what I think. I’m just nice like that. OK, Fine. Whatever. Just bring one. I understand if you simply must eat all the others. (wink, wink…)

Oh my… who doesn’t have memories of Dr. Seuss… Anyone?  I think not.  “The Grinch”, “Red Fish, Blue Fish”, “Green Eggs & Ham”.  Just hearing those words sends a rush of memories cascading through my “maternal mind“…  Two sweet little buddies curled up on my lap, snuggled under the covers to read a nighttime book (or two…) before “nighty-night”.  A memory so warm and close I can practically touch it. But those “little buddies” of mine have moved on to other books… Accounting & Finance and Anatomy & Chemistry.  And with my son at 6’1″, curling up on my lap is probably out of the question.  No worries.  Plenty of nieces and nephews keep the bookshelf dust from accumulating; and I know in my heart that (someday) God will bless me with some little “Grandbuddies” of my own for snuggling and spoiling and baking Dr. Seuss cookies – all in due time. So today we celebrate our beloved Dr.Seuss; born on March 2nd 1904, some 109 years ago.  As a tribute – a “Birthday Poem“, written Dr.Seuss himself!!  A man wise beyond his years. He will live forever in our hearts, both young and old.  Dr. Seuss – we thank you.  live happy… laugh, love, dream, create

snow day

chocolate chip cookiesSo here in Kansas City, it’s been snowing.  And snowing.  And snowing.  Now, mind you, this wouldn’t be so bad… if I didn’t hate the cold so much.  But I do.  And snow is cold.  So today was another “snow day” around here.  Schools, businesses, roads… closed.  Kids… home. Now when my kids were little, “snow days” almost always involved, among other things, two basic foods… hot chocolate and homemade chocolate chip cookies!!

So today I had one of my “babies” AND my hubby here, both forced to work from home because of the weather.  It made me happy just having them here…  Happy enough that I decided to make cookies.  Chocolate Chip Cookies; of course.

As the house filled with the warm, familiar scent of homemade cookies, hot from the oven… our neighborhood street filled with the happy, contagious laughter of kids.  It was “snow day” laughter… that “three pair of socks, frozen pink cheeks, let’s build a snowman” kind of laughter.  And it truly was contagious.  Even for someone who really hates the cold. So I gathered a plate of warm cookies… and out I went.  After all, playing in the snow is hard work!  They HAD to be hungry. So they nibbled on cookies and gave me a tour of the area while I snapped pics.  The “under the ground igloo/ fort”,  their snowmen, snow babies, a snow dog (named Lulu) and a snow horse!  And, yes… They even built a snowman for my yard!!   After awhile, I realized that my “50-something” toes were cold.  No… frozen.  So with a camera full of pics, an empty cookie plate and frozen pink cheeks… I decided to head on back inside.  I guess next time I’ll wear three pair of socks…
